Tapps is the newest venue on this list by some distance, opened on Whiteladies Road in early 2025 by Neil and Olivia Greenwood -- Bristol pub-and-bar operators already known for The Shakespeare and for turning the John Cabot into the Royal Oak, so despite the venue's youth this is not a first-time operation finding its feet, it is experienced independent operators trying a new format. That format is a wall of draught wine taps facing a vinyl-listening nook: sustainably sourced wine on tap, small plates at £7 to £13, a soundtrack of vinyl classics rather than a playlist.

It sits well inside the brief's "1 to 4 years old" window (arguably younger than intended, being barely a year old at review time) and comfortably under budget on food price. Reviews are positive but genuinely thin on volume -- this is a venue still building its review base, not one drowning in five-star noise, which is closer to "hungry for bookings" than most names on this list. One recurring caveat worth taking seriously for a founder dinner: several reviewers flagged the music as loud and bass-heavy, which cuts against the kind of table conversation and 20-minute guest-of-honour talk this series is built around.

Confirmed via the official site: closed Monday (open only on bank holidays, 1-6pm), open Tuesday 5-11pm -- fits the early-week ask on the one night that matters, but Monday is a genuine dead end here, not a maybe.
