Pasta Ripiena is Pasta Loco's sibling and, since Pasta Loco's 2023 closure, effectively its successor as the Bianchis Group's flagship pasta room -- run by the same Ben Harvey and Dom Borel, with a menu built around a single idea done well: fresh stuffed pasta (ravioli, tortellini) with a short, daily-changing list of fillings and sauces, reportedly the first restaurant in the country built around stuffed pasta specifically. The room is small and informal -- close-packed square wooden tables along a single dining room on St Stephen's Street -- and reviewers consistently rate it very highly, 4.8 on TripAdvisor, described as living up to genuine hype rather than coasting on Pasta Loco's old reputation.

The honest caveat is the same one that applies to every Bianchis Group name on this shortlist: this is not a standalone founder-owned single site, it sits inside a group of five to six restaurants under Harvey, Borel and cousin Joe Harvey. Against the brief's "not a chain" criterion that is a real mark against it, softened somewhat by the fact that the group is still small, still Bristol-only, and still visibly chef-led rather than corporate-run.

Mains run around £24, with an "extraordinarily good-value" fixed-price lunch reviewers specifically call out. The Good Food Guide describes trade as steady rather than constantly packed -- "not quite as popular as big brother Pasta Loco" was, before that closed -- which reads as a genuine opening rather than a fully-booked room turning bookings away.
