La Panza is a genuinely independent, single-site Italian trattoria run by owner Riccardo Damiani, who moved from Ancona to Bristol and opened it as his first restaurant -- head chef Filomena works alongside him in the kitchen, and the menu draws on family recipes and organic ingredients imported from Italy alongside small Bristol producers. Since April 2021 it has occupied Thomas Chatterton House on Redcliffe Way, a Grade II-listed building named for the young Bristol poet who once lived there -- a genuinely characterful room for a series that wants some sense of occasion.

Reviews are warm and consistent: reviewers describe straightforward Italian food done properly, calamari, prawn tagliatelle, duck ragu and tiramisu singled out, friendly and quick service, no fusion gimmicks. Two-course pricing around £22-31 sits comfortably within budget. The venue also runs a genuinely varied events calendar beyond dinner service -- drag performances, pasta-making classes, a techno day party have all been hosted there -- which speaks to an operator comfortable with group bookings and non-standard nights, a good sign for an early-week series.

Two things are worth flagging honestly rather than smoothing over. First, the standard online booking system caps at 6 people inside or 8 outside; a table of 10 would need a direct email to arrange rather than being available off the shelf, which is a smaller ask than "private room" implies but not nothing. Second, La Panza's own website gives genuinely conflicting Monday hours across different pages -- one section says open 12-11pm, the footer says 12-10pm, another says closed entirely -- which the existing research already flagged and this pass could not resolve without a phone call.
