Ragù is Mark and Karen Chapman's second restaurant, opened in April 2025 inside a repurposed shipping container at Wapping Wharf, three years after they launched COR in Bedminster (itself now a Bib Gourmand holder four years running). At around a year and a half old, Ragù sits right inside the brief's "1 to 4 years" age window, and the critical reception has been extraordinary for a restaurant this young: Grace Dent, writing in The Guardian in June 2025, called it possibly her "favourite new restaurant of 2025," describing "some of the most skilful cooking anywhere in Britain right now" and singling out a crespelle in tomato brodo, Ashton Court venison with bone marrow butter, and a chocolate budino with sour cherries. It has since picked up its own Michelin Bib Gourmand.
The food is Italian share-plates: handmade pasta, wood-fired and open-flame cooking, deeply flavoured ragùs, a genuinely well-regarded tiramisu, all described by the restaurant itself as "a love letter" to Italian food, culture and hospitality. The room, being a converted shipping container, is small and intimate by nature -- "cool, minimal, romantic" in Dent's words -- which cuts both ways for this series: it is exactly the chef-led, single-site, husband-and-wife-run independent the brief is built around, but Grace Dent-level national press for a year-old restaurant is precisely the kind of attention that fills a booking book fast, worth checking live availability on rather than assuming it needs the footfall.
Mains run around £20. Existing research already flags Ragù as open Monday and Tuesday evenings, which -- combined with its youth and small footprint -- makes it one of the stronger fits in this batch on paper, tempered only by how quickly a Guardian rave can turn "hungry for bookings" into "booked out." A table-for-10 in a shipping-container restaurant has not been publicly confirmed and is worth a direct ask before assuming it fits. Wapping Wharf itself is Bristol's newest harbourside food destination, a cluster of converted shipping-container restaurants and independent shops a short walk from the M Shed museum.
