OTHER is chef-owner Zak Hitchman's debut restaurant on Cannon Street, run with his partner Emma since around 2023, comfortably inside the brief's "1 to 4 years" window. Hitchman's pedigree is serious: head chef at the Michelin-starred Casamia before it closed in 2022, and sous chef before that at Ynyshir, one of the UK's most acclaimed kitchens. At OTHER he has deliberately stepped away from that formality -- no lengthy tasting menu, instead a concise, frequently changing menu of small and sharing plates drawing on Asian, American and European influences. The critical reception has been fast and real: a Michelin Bib Gourmand, a place in The Good Food Guide's Best Local Restaurants 2025, and The Bristol Sauce calling it "quite simply, some of the best food you can get in Bristol," singling out a hot-and-sour crab sauce as a standout.
Two structural facts weigh heavily against this series' brief, and are worth naming plainly rather than smoothing over. First, Michelin's own listing puts capacity at just 18 guests -- meaningfully below the brief's 20-to-40-cover target, meaning a 10-cover booking would be well over half the entire room on any given night. Second, and more serious for this series specifically: independently confirmed opening hours (cross-checked across two separate searches, both in full agreement) show OTHER closed Monday, Tuesday and Sunday entirely, trading dinner-only Wednesday and Thursday (5:45-9pm) and lunch-plus-dinner Friday and Saturday (12:30-2pm, 5:45-9pm) -- exactly four services a week, none of them early-week. That is the direct opposite of the "quieter early-week" target this series is built around; whatever OTHER's food quality, an early-week booking here is not realistically available without the venue changing its own trading pattern.
Cannon Street sits in the residential heart of Bedminster, a few streets back from the busier North Street strip -- a genuinely local, low-key setting matching the restaurant's own understated branding. Given the closed early-week nights and the tight 18-cover room, OTHER reads as a candidate for a Wednesday or Thursday booking at most, not the Monday/Tuesday slot this series is built to fill.
