Marmo is owner-run by Cosmo and Lily Sterck, who opened it in 2019 in the former Bar Buvette unit on Baldwin Street, in the heart of Bristol's Old City restaurant quarter. Cosmo cooked at Brawn and St John in London before this, two kitchens with a strong reputation for honest, ingredient-led cooking, and that lineage shows: Marmo's menu is compact and single-section, moving from small plates like gnocco fritto through to hung meats and confident vegetable cooking, built around whatever is seasonal and local.
