COR opened on North Street in October 2022, run by husband-and-wife team Mark and Karen Chapman, who met working in hospitality in Sydney before settling in Bristol. Mark honed his small-plates craft at Bravas and Gambas (the latter earning Michelin recognition on his watch) before striking out alone -- a genuine chef-owner trajectory, not a first-time gamble. At around four years old COR sits right at the edge of the brief's "1 to 4 years" window, and its critical reception has been fast and consistent: a Michelin Bib Gourmand every year since 2023, plus listings in The Good Food Guide, Timeout and Hardens, and a glowing Tom Parker Bowles review in the Mail on Sunday. The food is confidently Mediterranean-inspired small plates in a bright, white-walled room with big plate-glass windows -- fennel salami croquettes, scallops in miso and caper butter -- built for grazing rather than a fixed three-course structure. Independently confirmed opening hours show COR trading Monday evening (5-11pm) and both lunch and dinner on Tuesday and Wednesday (12-3:30pm, 5-11pm), closed only on Sunday -- a genuinely early-week-friendly pattern, reinforced by its own published Menu du Jour: a £30, three-course set running Monday to Thursday, 5-6pm specifically, which reads as an explicit invitation to fill exactly those quieter early slots.

COR's own site confirms a dedicated group-bookings and private-hire offering for parties of 9 to 24, with a group rate from £40pp -- comfortably able to absorb a 10-cover booking as a small slice of a larger capacity rather than needing the whole room. North Street itself has become one of Bedminster's clearest food destinations over the last decade, a working high street rather than a polished dining quarter, which suits an unpretentious founder-led series well.
